Ingredients To Make Sous Vide Chili 

  • 2-3 pound Tri-tip roast
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1  can red kidney beans, drained and rinsed
  • 1  can petite diced tomatoes
  • 1 can tomato sauce
  • 2 tbsp tomato paste
  • 1 ½ cups beef broth
  • 2 ½ tbsp chili powder
  • 2 tbsp ground cumin
  • 1 ½ tbsp granulated white sugar
  • 1 tbsp garlic powder
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp cayenne pepper

Step By Step Instructions To Make Sous Vide Chili

For The Sous

Step1

Set the sous to vide machine to 55 degrees Celsius/131 degrees Fahrenheit.

Step2

To taste, salt the tri-tip. Place the tri-tip in a freezer bag and remove the air with a vacuum sealer or displacement method. For 3 hours, soak the tri-tip in the bath.

Step3

Remove the bag from the bath. After removing the tri-tip from the bag, pat it dry and season with salt and pepper to taste. Add oil to a hot pan and heat on high. On each side, sear for 1 to 2 minutes.

Step4

Make bite-sized pieces of tri-tip and set them aside.

For The Chili 

Step1

Add olive oil to a large pot on medium heat. Add the diced onion to the hot oil once it has heated. Stir frequently for 10 minutes or until tender.

Then add the cayenne pepper, cayenne powder, chili powder, cumin, sugar, tomato paste, garlic powder, salt, and pepper. Once onions are coated evenly, stir them again.

Step3

Pour the broth into a large pot and add the diced tomatoes, beans, and tomato sauce. Mix well.

Step4

Boil the chili for a few minutes. After that, reduce the heat to low and simmer the chili (uncovered), stirring occasionally, for 20-25 minutes.

Turn off the heat and remove the pot. Before serving, let the chili rest for 5-10 minutes. Add the sous vide tri-tip to the pot. You can serve it up with sour cream and cheddar cheese if you like!
