Place the salt, pepper, sugar, juniper berries, coriander, 4 bay leaves, mustard seeds and salt in a pan and add two litres of water and boil, stirring, until the sugar dissolves. Boil for 2 to a few mins. Do away with the burner and leave it to chill.
