Sauté the truffles in butter after slicing them. After removing the truffles, reserve them.

Pour one tablespoon of Madeira into the pan and dilute the juices. Reduced brown stock and simmer for five minutes.

Strain the mixture in a clean saucepan. Return the truffle to the sauce and add the remaining 1 tablespoon of Madeira. Maintain a hot temperature without boiling it.
