  • 12-inch shallow dutch oven
  • 27-30 coals lit and heated until beginning to turn grey

Step1

Spread the olive oil evenly in the bottom of a Dutch oven measuring 12 or 14 inches in diameter.

Step2

In a thin circle, slice the potatoes. Fill the Dutch oven with the potatoes and spread them in a single layer.

On top of the potatoes, sprinkle the salt, pepper, cheese, and rosemary. Place a dot of butter evenly over each potato.

For Baking in the Oven

Put 9 coals on the bottom and 18 coals on top of a dutch oven that is on a stand or on a safe ground area. For a shallow 12-inch dutch oven, this should heat to 375 degrees.

During the cooking process, monitor the coals and add more when the original coals lose their heat.

The bottom of the Dutch oven may need 1/3 cup water added if the potatoes are cooking too quickly despite the coal adjustment.

It takes about 45 minutes for the potatoes to become soft.
